Semillon

Semillon wine is produced from the Semillon grape, a golden-skinned grape which has low acidity and a somewhat oily texture. Semillon grapes are high-yielding, producing 6-8 tons per acre from vigorously growing vines. The vines are easy to cultivate and are disease resistant. The Semillon grape is used to make both dry and sweet white wines, which age well.

The history of the Semillon vine is somewhat difficult to discern. It’s thought to have begun in southern France, and to have arrived in Australia in the early 1800’s. In the 1800’s Semillon grapes dominated South African vineyards, though found in only 1% of vines now. Semillon is grown in Chile, though less there, too. California and Washington produce a small amount of Semillon wine. France and Australia are the main producers.

In France, Semillon production is mostly near Bordeaux, where it’s commonly blended with Sauvignon. In dry wines, it’s a less dominant constituent, but when used in sweet wines, it’s generally the dominant variety. Dry wine meant to be drunk young is fermented in stainless steel to bring out the light fruit flavors. Wine intended to be aged is fermented in oak, and makes a very fine dry wine, with a smooth, lemony quality which deepens with age.

Semillon is widely produced in Australia, particularly in the Upper and Lower Hunter Valley, where 4 styles of Semillon wines are made. One style, known as Sem-Sav, is blended with Sauvignon or Chardonnay to add a refreshing aroma to the depth of the Semillon. There’s a sweet style, resembling Sauternes, as well as 2 quality dry wines of excellent vintage. These styles, particularly Hunter Valley Semillon, have a buttercup-yellow color with signature honey or burnt toast characteristics, as well as rich complexity of flavor. Young Hunter Valley Semillon has more citrus flavors, such as lime.

Drier Semillon wine works well with seafood, such as shellfish and tilapia. Richer styles pair better with cream or butter sauces, as well as blue cheeses. The sweet wines finish a meal beautifully when drunk with dessert.
